But as far as your question goes, I would say none of them. It is assumed (as of the series finale), that Piper dies of old age, but it is never stated for sure. But if I were to pick one, I'd pick that one (even though techincally she could have been killed by a demon in the end, we never know).
I'd like to think she died of old age though!

-A demon would stand nothing to gain from killing Piper when she's already relatively out of the picture as an old lady. -There is no "evil Wyatt" to kill her, as the event that turned him never happened. -At the end of the flash forward, Piper looked happy and lively and healthy even as an old lady. Therefore it makes no sense that she would kill herself. -It also gives us no inclination of her being sick with anything major.
Also need to put this out there: the Charmed ending was intended to be as happy and pleasant as possible, perhaps even to a fault as far as realism may be concerned.
Therefore, it's not just hopeful thinking on Val's part, it is actually a safe assumption that Piper Halliwell-Wyatt (and the rest of the family, for that matter) simply dies of old age and continues to roll through generations.

I personally liked the pleasant ending, but I guess that's all a matter of opinion . But none the less, I do agree that we should assume she dies of old age. But technically her death never came up in the finale, hence this question does not have an exact answer. Only a very very good guess Oh, and just by the way. I was not the one that voted a demon killed her. lol.

I reckon a short clip or two of adult Wyatt and Chris fighting demons together would probabaly do the trick, though, as it would drive home the fact that hey, there's still a good little dose of demon fighting in all this somewhere. Plus a scene with Chris and Bianca together to verify that they met up and got together despite the lack of an evil Wyatt, meaning they were meant to be after all.
Technically, I'm basically calling for more Chris. (Incidentally, anyway.) First time I've ever said that one! (Though I've never called for less Chris, either, so please, ladies, there's no reason to attack me.)

in the future where Wyatt was evil, and Chris states in Hyde School Reunion at the restaurant that Piper dies when he turns fourteen, I always believed that evil Wyatt did it. I don't know why, I just had a feeling he had something to do with it. In the new future I'd assume that she died of old age.

No, I don't think that was Wyatt's reason to kill his mom. I just believe that the stuff Gideon did to Wyatt corrupted his mind.
